This tart has a base of almond shortcrust pastry and on top of it sits the sponge cake soaked with lemon syrup. A refreshing note is added with the mint creamy jelly as well as the lemon, yuzu and lime creamy. The light meringue adds a hint of crispiness and some sweetness.
